Rotisserie Chicken Noodle Soup

Ingredients

  • One Rotisserie chicken, shredded
  • 4 cups chicken broth
  • 1 cup water
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • Green Onion
  • Half an onion
  • 1 1/2 cups Ditalini pasta
  • 4 cloves of garlic
  • 2 tablespoons olive oil
  • Soy Sauce
  • Ginger cube (optional)
  • Salt / Pepper / Parsley / Rotisserie Chicken Seasoning / Cajun Seasoning

Instructions

  1. Heat soup pot on medium heat while preparing carrots, celery, onion, and green onion.
  2. Add olive oil and garlic to pot until aromatic.
  3. Add carrots and celery. Let cook for a few minutes and then add onion and green onion stem. Add salt & pepper to taste. Let cook for a few more minutes.
  4. Add chicken broth, water, soy sauce, and seasonings (except parsley). Let cook for 10-15 minutes until light boil begins.
  5. Once broth is boiling, add ditalini pasta and ginger.
  6. Let ditalini cook for a few minutes and then add shredded rotisserie chicken.
  7. Burn your tongue trying out the broth / seeing if the pasta is cooked. Soup is ready to serve when ditalini is still a little hard as it continues to cook in the soup.
  8. Garnish with the green part of the green onion.
