Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef
  • 1 white onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic
  • 1 1/2 tsp. italian seasoning
  • 1/4 tsp. red pepper flakes
  • 2 14.5 oz. cans diced tomatoes
  • 1 8oz. can tomato sauce
  • 4 cups chicken broth
  • 2 cups cooked rice

Instructions

  1. Cut up green and red bell peppers. Chop white onion.
  2. In a large, deep pot, add olive oil to a pan and brown the ground beef.
  3. Add onion and peppers to the browned beef. Mix together.
  4. Add garlic, italian seasoning, and red pepper flakes. Stir until combined.
  5. Add diced tomatoes, tomato sauce, and chicken broth. Stir.
  6. Add cover and bring to a light boil. Stir in cooked rice and enjoy!
