Ingredients
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded carrots
- 2 tbsp. butter
- 1 white onion, diced
- 2 garlic cloves, minced
- 1 cup cheddar cheese
- 1 cup chopped broccoli
- salt
- pepper
- paprika
- 2 cups gnocchi
Instructions
- Add butter to a pan and sauté the onions, carrots, and garlic until lightly browned.
- Generously season with salt, pepper, and paprika.
- Pour chicken broth into the same pan and bring to a simmer. Add broccoli and cook for a few minutes until tender.
- Lower the heat and add the heavy cream. Mix together, and slowly incorporate the cheese.
- In a separate pot boil water and cook the gnocchi according to package instructions.
- Transfer cooked gnocchi to the pan and mix until the sauce coats the gnocchi.
- Continue simmering for about 5 minutes, until the cheese thickens. Serve with extra black pepper and enjoy!
