Veggie Boursin Pasta


  • 2 rounds Boursin cheese
  • 2-3 medium zucchini, chopped
  • 2 bell peppers, chopped
  • 1 red onion, chopped
  • cherry tomatoes, halved
  • 4-6 garlic cloves
  • olive oil
  • cracked black pepper
  • sea salt
  • sprinkle of dried parsley
  • pasta of your choice


  1. Place 2 Boursin rounds into the middle of a 9×13 dish.
  2. Chop zucchini, bell peppers, and red onion. Add to dish, along with cherry tomatoes. Veggies should surround the cheese rounds.
  3. Place garlic cloves on top of the vegetables, spreading them evenly throughout the dish.
  4. Drizzle with olive oil.
  5. Add pepper and salt, to taste.
  6. Bake at 400 degrees for 30 minutes, until cheese is spreadable and veggies are tender.
  7. In a pot, boil water and cook pasta of your choice according to package instructions.
  8. When the cheese and veggies are ready, spread cheese and combine all veggies.
  9. Add drained pasta to the 9×13 pan and mix together.
  10. Top with fresh basil and enjoy!
