Broccoli Cheddar Gnocchi


  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded carrots
  • 2 tbsp. butter
  • 1 white onion, diced
  • 2 garlic cloves, minced
  • 1 cup cheddar cheese
  • 1 cup chopped broccoli
  • salt
  • pepper
  • paprika
  • 2 cups gnocchi


  1. Add butter to a pan and sauté the onions, carrots, and garlic until lightly browned.
  2. Generously season with salt, pepper, and paprika.
  3. Pour chicken broth into the same pan and bring to a simmer. Add broccoli and cook for a few minutes until tender.
  4. Lower the heat and add the heavy cream. Mix together, and slowly incorporate the cheese.
  5. In a separate pot boil water and cook the gnocchi according to package instructions.
  6. Transfer cooked gnocchi to the pan and mix until the sauce coats the gnocchi.
  7. Continue simmering for about 5 minutes, until the cheese thickens. Serve with extra black pepper and enjoy!
