Ingredients
- 2 rounds Boursin cheese
- 2-3 medium zucchini, chopped
- 2 bell peppers, chopped
- 1 red onion, chopped
- cherry tomatoes, halved
- 4-6 garlic cloves
- olive oil
- cracked black pepper
- sea salt
- sprinkle of dried parsley
- pasta of your choice
Instructions
- Place 2 Boursin rounds into the middle of a 9×13 dish.
- Chop zucchini, bell peppers, and red onion. Add to dish, along with cherry tomatoes. Veggies should surround the cheese rounds.
- Place garlic cloves on top of the vegetables, spreading them evenly throughout the dish.
- Drizzle with olive oil.
- Add pepper and salt, to taste.
- Bake at 400 degrees for 30 minutes, until cheese is spreadable and veggies are tender.
- In a pot, boil water and cook pasta of your choice according to package instructions.
- When the cheese and veggies are ready, spread cheese and combine all veggies.
- Add drained pasta to the 9×13 pan and mix together.
- Top with fresh basil and enjoy!
